Coffee & Pecan Pumpkin Bread: Flavorful, Fun, and Fit-Friendly

Who says staying fit means giving up the foods you love? I’m here to prove that you can still enjoy moist, flavorful, and indulgent treats—without derailing your health goals. This Coffee & Pecan Pumpkin Bread is the perfect example: it’s rich, comforting, and full of fall flavor, but also made with thoughtful ingredients that let you enjoy it guilt-free.

The addition of instant coffee is a game-changer—it adds a subtle depth to the flavor without overpowering the warm pumpkin and spice notes. I love this bread on a relaxing Sunday morning, my designated rest day, paired with my favorite warm beverage. To make it even more special, I like to top my slice with Fix & Fog Everything Butter (or your favorite healthy nut butter) and a drizzle of honey—it takes every bite to the next level!

Whether you’re looking for a breakfast that keeps you energized, a snack for your afternoon coffee break, or a treat to share with friends, this pumpkin bread fits the bill. And the best part? You can make it in just 10 minutes of prep time and let the oven do the work!

Prep time: 10 minutes
Cook time: 60 minutes
Serves: 8–10 (1 loaf)

Ingredients:

  • 1 T. ground flax

  • 3 T. water

  • 1 c. all-purpose flour

  • ½ t. baking soda

  • ¼ t. baking powder

  • ¼ t. salt

  • 2 t. pumpkin pie spice

  • ½ t. instant coffee granules

  • 1 c. pumpkin puree

  • ¼ c. white sugar

  • ¼ c. light brown sugar

  • 6 T. coconut oil, melted (or butter)

  • ½ c. pecans, chopped

  • Fix & Fog Everything Butter (or your favorite healthy nut butter) for topping

  • Honey for topping

Instructions:

  1. Preheat oven to 350°F. Grease an 8x4-inch loaf pan with butter or coconut oil.

  2. In a large mixing bowl, combine flax and water and let sit 2-3 minutes to thicken. (Tip: you can swap this for 1 large egg if you prefer—just adjust your shopping list accordingly.)

  3. In a small bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, and coffee granules.

  4. Add pumpkin puree, both sugars, and coconut oil to the flax mixture and whisk until smooth.

  5. Gently fold the dry ingredients into the wet mixture, mixing just until combined. Then fold in the pecans.

  6. Transfer the batter to your prepared loaf pan. Bake 55–60 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs and the top is golden brown.

  7. Let cool to room temperature before slicing. Top each slice with Fix & Fog Everything Butter and a drizzle of honey for an extra-special touch.

This bread is perfect for meal prepping too! Slice it up and enjoy it for breakfast throughout the week, or bring it along as a wholesome snack after your workout. It’s proof that healthy living doesn’t mean boring food—you can fuel your body, stay on track with your fitness, and still enjoy every bite.
